Ingredients

  • 1.5 lb beef tenderloin, cut into 1-inch cubes
  • 1 lb small red potatoes, quartered
  • 1 lb broccoli florets
  • 1 red onion, cut into wedges
  • 4 cloves garlic, minced
  • 3 tbsp olive oil
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the beef tenderloin cubes with 1 tbsp olive oil, rosemary, thyme, salt, and pepper. Set aside.
  3. In the same bowl, toss the potatoes, broccoli, red onion, and minced garlic with the remaining 2 tbsp olive oil, salt, and pepper.
  4. Spread the vegetables in a single layer on a large baking sheet.
  5. Roast the vegetables for 15 minutes.
  6. Add the seasoned beef tenderloin cubes to the baking sheet with the vegetables.
  7. Return the sheet pan to the oven and roast for another 10-15 minutes, or until the beef tenderloin reaches your desired doneness and the vegetables are tender.
  8. Serve the beef tenderloin sheet pan dinner immediately.
