Ingredients
- 1.5 lb beef tenderloin, cut into 1-inch cubes
- 1 lb small red potatoes, quartered
- 1 lb broccoli florets
- 1 red onion, cut into wedges
- 4 cloves garlic, minced
- 3 tbsp olive oil
- 1 tsp dried rosemary
- 1 tsp dried thyme
- Salt and black pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the beef tenderloin cubes with 1 tbsp olive oil, rosemary, thyme, salt, and pepper. Set aside.
- In the same bowl, toss the potatoes, broccoli, red onion, and minced garlic with the remaining 2 tbsp olive oil, salt, and pepper.
- Spread the vegetables in a single layer on a large baking sheet.
- Roast the vegetables for 15 minutes.
- Add the seasoned beef tenderloin cubes to the baking sheet with the vegetables.
- Return the sheet pan to the oven and roast for another 10-15 minutes, or until the beef tenderloin reaches your desired doneness and the vegetables are tender.
- Serve the beef tenderloin sheet pan dinner immediately.

- For medium-rare beef tenderloin, aim for an internal temperature of 130-135°F (54-57°C).
- You can customize the vegetables based on your preferences. Other great options include asparagus, bell peppers, or mushrooms.
