Description
Classic Beef Bourguignon is a rich and comforting French dish that combines tender beef, savory bacon, and earthy mushrooms.

- 6 oz Bacon
- 2 lbs Beef chuck
- 2 tbsp Unsalted butter
- 1 medium Yellow onion
- 2 medium Carrots
- 3 cloves Garlic
- 2 tbsp Tomato paste
- 2 tbsp All-purpose flour
- 750 ml Burgundy wine
- 3 cups Beef stock
- 1 tbsp Better than Bouillon beef bouillon
- 1 tbsp Fresh thyme
- 2 leaves Bay leaves
- 1 tbsp Kosher salt
- 1 tsp Freshly cracked pepper
- 1 cup Frozen pearl onions
- 8 oz Cremini mushrooms
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the chopped bacon in a 5 qt Dutch oven over medium-low heat. Stir occasionally until browned, then remove with a slotted spoon.
- Season the beef cubes generously with kosher salt and freshly cracked pepper. Increase the heat to medium-high and sear the beef until browned on all sides. Remove the beef and set aside.
- Sauté the chopped onions and carrots in the same pot with 2 tablespoons of butter for 2-3 minutes. Add minced garlic and cook for another minute, followed by tomato paste for extra flavor. Sprinkle flour on top and stir well for another 2-3 minutes.
- Deglaze the pot by adding Burgundy wine, scraping the browned bits. Pour in beef stock and stir in bouillon until simmering. Add the beef and bacon back in along with thyme and bay leaves. Cover and transfer to oven. Cook for 2 1/2 hours until tender.
- Sauté mushrooms in the remaining 2 tablespoons of butter over medium-high heat until browned, about 5-7 minutes. Add pearl onions and cook for another 5 minutes until golden. Season with salt and pepper.
- Combine the sautéed mushrooms and pearl onions into the beef bourguignon once done baking. Return to the oven and cook for an additional 45-60 minutes until the beef is fork-tender. Allow it to rest covered for 30 minutes before serving.
