Description
A delicious and easy dinner idea featuring sweet potatoes stuffed with BBQ chicken.
Ingredients

- 4 medium sweet potatoes
- 2 cups cooked shredded chicken
- 1 cup BBQ sauce
- 1 cup shredded cheese (cheddar or mozzarella)
- 1/2 cup green onions, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and pierce the sweet potatoes with a fork.
- Bake the sweet potatoes for 45-60 minutes until tender.
- In a bowl, mix the shredded chicken with BBQ sauce.
- Once the sweet potatoes are done, cut them in half and scoop out a little of the flesh.
- Mix the scooped sweet potato flesh with the BBQ chicken mixture.
- Stuff the sweet potato halves with the BBQ chicken mixture.
- Top with shredded cheese and return to the oven for 10 minutes until the cheese is melted.
- Garnish with chopped green onions before serving.
