- 1 cup thawed frozen corn kernels
- One 15-ounce can creamed corn
- 1 cup sour cream
- One 8.5-ounce box cornbread mix
- 2 large eggs
- 3 cups cooked, chopped chicken
- 1 cup barbecue sauce
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 350°F. Lightly coat a 9×13-inch baking dish with cooking spray.
- In a large bowl, combine the thawed frozen corn kernels, creamed corn, sour cream, cornbread mix, and eggs. Mix until just combined. Pour the mixture into the prepared baking dish and bake for 40 minutes.
- While the cornbread base bakes, toss the cooked, chopped chicken with the barbecue sauce in a separate bowl until evenly coated.
- Carefully remove the cornbread casserole from the oven. Evenly spread the prepared chicken mixture over the cornbread, then sprinkle with the shredded cheddar cheese.
- Return the dish to the oven and bake for an additional 10 to 15 minutes, or until the cheese is melted and bubbly, and the cornbread is fully set.
