- 3 cloves garlic, minced

- 1 tablespoon red curry paste
- 1 can (14 ounces) coconut milk
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 1 cup fresh basil leaves, chopped
- Salt and pepper to taste
- Cooked rice or noodles for serving
Instructions
- In a large skillet, heat the vegetable oil over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
- Add the red curry paste to the skillet, stirring well to combine with the onion mixture.
- Add the chicken pieces, cooking until they are no longer pink, about 5-7 minutes.
- Slowly add the coconut milk, stirring to combine with the chicken and curry paste.
- Stir in the fish sauce and brown sugar, allowing the sauce to simmer for 10 minutes.
- Toss in the chopped basil leaves and season with salt and pepper to taste. Cook for an additional 2 minutes.
- Remove from heat and serve hot over cooked rice or noodles.
