  • 12 cups panko breadcrumbs
  • 23 tablespoons oil for pan frying or air fryer spray/oil
  • ½ cup mayonnaise
  • 34 tablespoons sweet chili sauce
  • 12 tablespoons sriracha (adjust for spice level)
  • 1 teaspoon honey or sugar (optional, for extra sweetness)
  • 1 teaspoon rice vinegar or lime juice (optional, for tang)
  • Sliced green onions
  • Sesame seeds
  • Lime wedges

Instructions

  1. Prep the Salmon: Pat the salmon cubes dry with paper towels and season with salt and pepper.
  2. Set Up Your Breading Station: Combine flour, salt, pepper, and garlic powder in a bowl. Whisk eggs and water in another bowl. Place panko in a third bowl.
  3. Bread the Salmon: Dredge each salmon piece in flour, then dip in egg, and finally press into panko crumbs.
  4. Cook the Salmon Bites: Heat oil in a skillet and cook salmon bites for 2–3 minutes per side until golden brown. Alternatively, air fry at 400°F for 8–10 minutes.
  5. Make the Bang Bang Sauce: Whisk together mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar or lime juice.
  6. Combine & Serve: Toss salmon bites with sauce or serve sauce on the side. Garnish with green onions, sesame seeds, and lime wedges.
