Ingredients

  • 1 lb (450g) lean ground turkey (93% or 95% lean)
  • 3 cups (600g) cooked brown rice (or white/jasmine rice)
  • 1 cup diced bell peppers
  • 1/2 cup shredded carrots
  • 1/2 cup chopped green onions
  • 1/2 cup (120ml) mayonnaise (Hellmann’s recommended)
  • 23 tbsp sriracha (adjust to taste)
  • 1 tbsp honey
  • 1 tbsp rice vinegar (or lemon juice as substitute)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the rice according to package instructions (brown rice takes about 40-45 minutes; use quick-cooking or pre-cooked rice to save time). Fluff with a fork and set aside.
  2. In a medium bowl, whisk together mayonnaise, sriracha, honey, rice vinegar, garlic powder, and onion powder until smooth. Adjust sriracha and honey to taste.
  3. Heat olive oil in a large skillet over medium-high heat. Add ground turkey, season with salt and pepper, and cook for 6-8 minutes until no longer pink and slightly browned. Drain excess liquid if needed.
  4. Add diced bell peppers, shredded carrots, and green onions to the skillet. Stir and cook for 3-4 minutes until veggies are tender but still crisp.
  5. Pour the bang bang sauce over the turkey and veggies. Stir to coat everything evenly with the sauce.
  6. Assemble bowls by scooping cooked rice into bowls and topping with the bang bang turkey mixture. Garnish with extra green onions or sesame seeds if desired.
