- 1/4 cup Butter
- 2/3 cup Dark Brown Sugar
- 1/2 teaspoon Cinnamon
- 1/2 cup Dark Rum
- 1 1/2 teaspoons Vanilla Extract
- 2 Medium Ripe Bananas
- 1/4 cup Chopped Pecans
- 4 scoops Vanilla Ice Cream
Instructions
- Begin by peeling two medium, ripe bananas and slicing them into thick, diagonal pieces, about half an inch thick.
- In a large skillet, melt 1/4 cup of unsalted butter over medium heat until it begins to sizzle.
- Once melted, add 2/3 cup of packed dark brown sugar and 1/2 teaspoon of cinnamon, stirring continuously for about 2–3 minutes until the mixture is smooth and caramelized.
- Carefully add the sliced bananas to the skillet, gently stirring them in the caramel sauce.
- Cook for about 2–3 minutes, stirring occasionally, until the bananas are just softened and glazed with the rich caramel.
- Pour in 1/2 cup of dark rum, swirling the skillet to mix everything well.
- If you’re feeling adventurous, tilt the skillet to allow the rum to catch the flame and flambé for about 30 seconds.
- Once the flames subside, remove the skillet from heat and stir in 1 1/2 teaspoons of vanilla extract and, if desired, 1/4 cup of chopped pecans.
- Scoop generous portions of vanilla ice cream into serving bowls and spoon the warm banana and caramel mixture over the ice cream.
- For an extra touch, garnish with more chopped pecans or a sprinkle of cinnamon.
Notes
- Light brown sugar can be used as a substitute.
- Walnuts can replace pecans or omit for nut allergies.
