  • 1 teaspoon ground cinnamon (optional)
  • 1 1/2 cups all-purpose flour
  • 1 cup chopped walnuts, lightly toasted

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.
  2. In a large mixing bowl, combine the mashed bananas, granulated sugar, brown sugar, and vegetable oil. Mix until well blended. Stir in the vanilla extract.
  3. Sprinkle the baking soda, salt, and ground cinnamon (if using) over the banana mixture. Fold in the all-purpose flour gently until just combined—don’t overmix!
  4. Carefully fold in the chopped walnuts, ensuring they are evenly distributed in the batter.
  5. Scoop the batter into the prepared muffin tin, filling each cup about two-thirds full.
