  • 4 large eggs

  • 1/2 cup banana pudding mix (instant)

  • 2 ripe bananas, mashed
  • 1 cup heavy cream (for whipped topping)
  • 2 tbsp granulated sugar (for whipped topping)
  • 1 tsp vanilla extract (for whipped topping)

Instructions

  1. For the crust: Combine crushed vanilla wafer crumbs and 1/4 cup granulated sugar. Add melted butter and stir until moistened. Press firmly into a 9-inch springform pan.
  2. For the filling: Beat softened cream cheese and 1 cup granulated sugar until smooth. Add sour cream, flour, and 1 tsp vanilla extract; mix on low speed. Gradually add eggs one at a time, mixing until just combined. Stir in 1 cup heavy cream, banana pudding mix, and mashed bananas.
  3. Prepare for baking: Preheat oven to 325°F (160°C). Wrap springform pan in foil and place in a larger roasting pan. Pour filling into the crust.
  4. Bake in a water bath: Carefully pour hot water into the roasting pan to surround the springform pan. Bake for 60-75 minutes until edges are set and center has a slight wobble.
  5. Cool and chill: Turn off oven, crack door, and let cheesecake cool in oven for 1 hour. Remove from water bath, then cool completely on a wire rack. Cover and refrigerate for at least 6 hours or overnight.
  6. For the whipped topping: Whip 1 cup heavy cream, 2 tbsp granulated sugar, and 1 tsp vanilla extract until stiff peaks form. Spread over chilled cheesecake and serve.
