Baked Zucchini with Goat Cheese: A Creamy, Guilt-Free Delight

- 4 pieces Zucchini
- 1 teaspoon Himalayan Salt
- 1 teaspoon Black Pepper
- 8 ounces Goat Cheese
- 1/4 cup Fresh Mint
- 2 tablespoons Extra Virgin Olive Oil
Instructions
- Preheat your oven to 400°F (200°C) and line a baking pan with parchment paper.
- Trim the ends of the zucchinis and cut a slit along the length of each one.
- Season the zucchini with Himalayan salt and black pepper, then add half of the fresh mint into each slit.
- Stuff each zucchini with goat cheese strips and top with remaining mint, then drizzle with olive oil.
- Cover the zucchini loosely with foil and bake for 10 minutes.
- Remove the foil and continue baking for an additional 20 minutes until tender and browned.
