Ingredients

  • 4 pieces Zucchini
  • 1 teaspoon Himalayan Salt
  • 1 teaspoon Black Pepper
  • 8 ounces Goat Cheese
  • 1/4 cup Fresh Mint
  • 2 tablespoons Extra Virgin Olive Oil

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking pan with parchment paper.
  2. Trim the ends of the zucchinis and cut a slit along the length of each one.
  3. Season the zucchini with Himalayan salt and black pepper, then add half of the fresh mint into each slit.
  4. Stuff each zucchini with goat cheese strips and top with remaining mint, then drizzle with olive oil.
  5. Cover the zucchini loosely with foil and bake for 10 minutes.
  6. Remove the foil and continue baking for an additional 20 minutes until tender and browned.
