This Mediterranean baked salmon is a quick and healthy meal for busy weeknights.
Ingredients

- 6 salmon fillets (6 oz each), skin-on
- 1½ pints cherry tomatoes, halved
- 6 garlic cloves, smashed
- 3 sprigs fresh basil (or 1 tsp dried Italian herbs)
- 4½ tbsp extra-virgin olive oil
- Coarse salt and freshly ground black pepper
Instructions
- Preheat oven to 400°F (200°C).
- In a glass or ceramic baking dish, toss halved cherry tomatoes, smashed garlic, basil sprigs, and 3 tbsp olive oil. Massage gently with your hands to coat everything evenly. Season the tomatoes generously with salt and pepper.
- Nestle the salmon fillets skin-side down in the tomato mixture, spacing them apart. Drizzle the remaining 1½ tbsp olive oil over the salmon. Lightly season the fillets with salt and pepper.
- Bake uncovered for 15–18 minutes. Check at 15 minutes: salmon should flake easily but still be juicy. If tomatoes aren’t bursting enough, broil for 1–2 minutes.
- Serve salmon with spoonfuls of tomato-garlic sauce and fresh torn basil on top.
