  • 2 tablespoons olive oil (extra virgin preferred)
  • 2 cloves garlic, minced
  • Juice of 1 medium lemon
  • Zest of half a lemon
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Optional: ½ teaspoon smoked paprika
  • Optional: pinch of red pepper flakes

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil and lightly oil it to prevent sticking.
  2. In a small bowl, whisk together olive oil, lemon juice and zest, minced garlic, salt, black pepper, thyme, parsley, and optional smoked paprika or red pepper flakes until fragrant.
  3. Pat salmon fillets dry with paper towels. Place them skin-side down on the prepared baking sheet.
  4. Brush the marinade evenly over the top of each fillet.
  5. Bake the salmon for 12-15 minutes, depending on thickness, until the salmon is opaque and flakes easily with a fork but still moist inside.
  6. Remove from oven and let rest for 2 minutes to allow juices to redistribute.
  7. Optionally, squeeze a little extra lemon juice over the salmon before serving.
  8. For crispy skin, broil the salmon for the last 1-2 minutes, watching carefully to avoid burning.
