A simple and foolproof baked salmon recipe featuring garlic, lemon, and herbs that keeps the fillet moist and flavorful.

- 4 salmon fillets (6 oz / 170g each), skin-on or skinless
- 2 tablespoons olive oil (extra virgin preferred)
- 2 cloves garlic, minced
- Juice of 1 medium lemon
- Zest of half a lemon
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Optional: ½ teaspoon smoked paprika
- Optional: pinch of red pepper flakes
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil and lightly oil it to prevent sticking.
- In a small bowl, whisk together olive oil, lemon juice and zest, minced garlic, salt, black pepper, thyme, parsley, and optional smoked paprika or red pepper flakes until fragrant.
- Pat salmon fillets dry with paper towels. Place them skin-side down on the prepared baking sheet.
- Brush the marinade evenly over the top of each fillet.
- Bake the salmon for 12-15 minutes, depending on thickness, until the salmon is opaque and flakes easily with a fork but still moist inside.
- Remove from oven and let rest for 2 minutes to allow juices to redistribute.
- Optionally, squeeze a little extra lemon juice over the salmon before serving.
- For crispy skin, broil the salmon for the last 1-2 minutes, watching carefully to avoid burning.
