  • 4 ripe but firm pears, halved and cored
  • 4 tablespoons goat cheese (softened)
  • 2 tablespoons honey
  • ¼ cup fresh or dried cranberries (or a mix)
  • 1 teaspoon fresh thyme leaves (optional)
  • Pinch of salt

Instructions

  1. Preheat your oven to 375°F (190°C). Cut the pears in half and scoop out the core, leaving a small well for the filling.
  2. Place the pear halves on a baking sheet lined with parchment paper. Spoon 1 tablespoon of goat cheese into each pear half, drizzle with honey, and sprinkle with cranberries. If using, scatter thyme leaves over each pear.
  3. Place the pears in the preheated oven and bake for 20–25 minutes, or until the pears are tender and slightly caramelized. Keep an eye on them to prevent overcooking.
  4. Remove from the oven, let cool slightly, then drizzle with remaining honey and serve warm.
