Instructions
- Combine dry ingredients: In a large mixing bowl, whisk together the gluten-free oat flour and almond flour. Add a pinch of sea salt.
- Incorporate wet ingredients: Add the 1/3 cup of almond butter, 5 tablespoons of maple syrup, 1/4 cup of dairy-free milk, and 1/2 tablespoon of vanilla extract to the dry ingredients. Mix until a cohesive dough forms, gradually adding more milk if needed to achieve a soft, pliable dough.
- Blend the filling ingredients: In a food processor, combine the soaked Medjool dates, 1/3 cup almond butter, 1 tablespoon cinnamon, 1/2 tablespoon vanilla extract, 1 tablespoon maple syrup, 2 tablespoons dairy-free milk, and a pinch of sea salt. Blend until smooth and spreadable.
- Shape and fill the rolls: Flatten the dough into a rectangle (about 1/4-inch thick). Spread the cinnamon filling evenly over the dough, leaving a 1/2-inch border on one long edge. Roll up tightly from the filled edge and pinch the seam to seal.
- Slice and chill: Slice the log into 8-10 rolls. Arrange them cut-side up and chill in the refrigerator for at least 30 minutes to firm up.
- Prepare the frosting and finish: Combine 1/4 cup almond butter in a small bowl, warming slightly or adding a tiny splash of milk if needed to reach a smooth, drizzle-able consistency. Drizzle over the chilled rolls. Serve immediately or refrigerate.
