- Melt the Chocolate: In a microwave-safe bowl, melt the semi-sweet chocolate chips with coconut oil or butter in 20-30 second intervals, stirring until nice and smooth. Spread dollops on a parchment-lined baking sheet to form cookie bases.
- Prepare Caramel-Coconut Mixture: In another bowl, combine the soft caramel candies and milk or heavy cream. Microwave until melted and smooth, then stir in the toasted coconut and vanilla extract until combined.
- Shape Cookies: Spoon the warm caramel-coconut mixture on top of the chocolate bases, gently flattening them to create round cookies.
- Drizzle with Chocolate: With any remaining melted chocolate, drizzle it over each cookie to create that signature striped appearance.
