- 6 large eggs
- 4 slices bacon, chopped
- 2 medium potatoes, peeled and diced
- 1 small onion, finely chopped
- ½ cup (120 ml) milk or half-and-half
- 1 cup (100 g) shredded cheddar or Swiss cheese
- 2 tablespoons olive oil or butter
- Salt and black pepper, to taste
- Fresh herbs (parsley, chives, or thyme), for garnish
- Use turkey bacon or vegetarian “bacon” as a lighter alternative.
- Add spinach, bell peppers, or zucchini for extra vegetables.
- Swap cheddar with Gruyère, mozzarella, or feta.
- Use sweet potatoes instead of regular potatoes.
- Add smoked paprika or garlic powder for additional flavor.
Instructions
- Preheat oven to 375°F (190°C). In an oven-safe skillet, cook chopped bacon over medium heat until crispy (6–8 minutes). Remove and drain, keeping 1 tbsp of bacon fat in the skillet.
- Add diced potatoes to the skillet and cook 8–10 minutes until golden and tender. Add onion and cook 3–4 more minutes. Season lightly with salt and pepper.
- In a bowl, whisk eggs, milk, salt, and pepper. Stir in shredded cheese and half of the cooked bacon.
- Pour egg mixture over potatoes and onions. Gently stir to distribute ingredients. Cook on the stovetop 3–4 minutes until edges begin to set.
- Sprinkle remaining bacon on top and transfer the skillet to the oven. Bake 12–15 minutes until eggs are set and top is golden.
- Let rest 5 minutes, garnish with fresh herbs, slice, and serve warm.
