Ingredients

  • 4 slices bacon, chopped
  • 2 medium potatoes, peeled and diced
  • 1 small onion, finely chopped
  • ½ cup (120 ml) milk or half-and-half
  • 1 cup (100 g) shredded cheddar or Swiss cheese
  • 2 tablespoons olive oil or butter
  • Salt and black pepper, to taste
  • Fresh herbs (parsley, chives, or thyme), for garnish
  • Use turkey bacon or vegetarian “bacon” as a lighter alternative.
  • Add spinach, bell peppers, or zucchini for extra vegetables.
  • Swap cheddar with Gruyère, mozzarella, or feta.
  • Use sweet potatoes instead of regular potatoes.
  • Add smoked paprika or garlic powder for additional flavor.

Instructions

  1. Preheat oven to 375°F (190°C). In an oven-safe skillet, cook chopped bacon over medium heat until crispy (6–8 minutes). Remove and drain, keeping 1 tbsp of bacon fat in the skillet.
  2. Add diced potatoes to the skillet and cook 8–10 minutes until golden and tender. Add onion and cook 3–4 more minutes. Season lightly with salt and pepper.
  3. In a bowl, whisk eggs, milk, salt, and pepper. Stir in shredded cheese and half of the cooked bacon.
  4. Pour egg mixture over potatoes and onions. Gently stir to distribute ingredients. Cook on the stovetop 3–4 minutes until edges begin to set.
  5. Sprinkle remaining bacon on top and transfer the skillet to the oven. Bake 12–15 minutes until eggs are set and top is golden.
  6. Let rest 5 minutes, garnish with fresh herbs, slice, and serve warm.
