Delicious 20-Minute Bacon Fried Rice You’ll Crave Tonight

- 4 slices streaky bacon
- 3 cups cold cooked jasmine rice
- 2 cloves garlic, finely chopped
- 1 cup frozen peas
- 2 stalks spring onions, sliced
- 1 tablespoon vegetable oil
- 2 eggs
- 2 tablespoons vegetable oil (extra for frying eggs)
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sugar
- 1 teaspoon sesame oil
- 2 tablespoons Marion’s Kitchen Crispy Chilli Oil
Instructions
- Whisk together the soy sauce, oyster sauce, sugar, and sesame oil in a small bowl. Set aside.
- Heat 1 tablespoon of vegetable oil in a large wok over medium-high heat. Cook the chopped bacon for 4-5 minutes until crisp.
- Push the bacon to one side and add finely chopped garlic. Stir-fry for about 10 seconds until aromatic.
- Add the cold cooked jasmine rice, breaking up clumps. Stir-fry for 2-3 minutes until hot and lightly toasted.
- Drizzle your stir-fry sauce over the rice, tossing to coat each grain evenly.
- Add the frozen peas and sliced spring onions. Stir-fry for 1 minute until bright and heated through.
- In a separate frying pan, heat 2 tablespoons of vegetable oil. Crack in the eggs and fry until edges are crispy.
- Divide the fried rice between bowls, top with a drizzle of chili oil and place a fried egg on top.
