- 1 lb ground beef
- 6 slices bacon (chopped)
- 1 small onion (diced)
- 2 cloves garlic (minced)
- 1 10 oz can diced tomatoes with green chilies
- 1 8 oz block cream cheese (softened)
- 2 cups shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 tsp Worcestershire sauce
- 1 tsp smoked paprika
- Salt and pepper to taste
- Fresh cilantro (chopped for garnish)
- Tortilla chips (for serving)
Instructions
- In a large skillet over medium heat, cook the chopped bacon until crispy.
- Remove the bacon from the skillet and drain on paper towels, leaving the drippings in the skillet.
- In the same skillet, add the ground beef and cook until browned, about 5-7 minutes.
- Add the diced onion and minced garlic to the skillet and cook until the onion is soft, about 3-4 minutes.
- Stir in the diced tomatoes, cream cheese, Worcestershire sauce, and smoked paprika until smooth.
- Gradually add the shredded cheddar and Monterey Jack cheeses, stirring until melted.
- Season with salt and pepper to taste and fold in the crispy bacon.
- Transfer the dip to a serving dish and top with reserved bacon and cilantro.
- Serve warm with tortilla chips for dipping.
