- 2 Chicken, shredded or diced (Use rotisserie or leftover cooked chicken)
- 2 Avocados, ripe (Opt for ripe but firm to avoid mushiness)
- 1/4 cup Red Onion, diced (Can substitute with shallots for milder taste)
- 1 cup Celery, chopped (Swap with chopped cucumbers if preferred)
- 1/4 cup Fresh Cilantro, chopped (Can be replaced with parsley or dill)
- 2 tablespoons Lemon Juice (Fresh juice yields the best results)
- Salt & Pepper (Season to taste)
Instructions
- Slice the avocados in half, remove the pits, and scoop the flesh into a large bowl. Mash the avocado until creamy but still slightly chunky.
- Stir in the diced red onion, chopped celery, and fresh cilantro.
- Squeeze in fresh lemon juice, and mix well.
- Gently fold in the shredded or diced cooked chicken.
- Sprinkle in salt and pepper to taste.
- Serve immediately or chill for 30 minutes to enhance the flavors.
