- 1 pound butternut squash
- 2 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 pound Brussels sprouts
- 8 ounce bow tie pasta
- 1 pound cooked smoked sausage
- 3 cloves garlic
- 2 tablespoon butter
- 1 teaspoon smoked paprika
- 2 teaspoon fresh thyme
Instructions
- Preheat the oven to 400°F. Toss cubed butternut squash with 1 tablespoon of olive oil, half the salt, and half the pepper. Roast for 15-20 minutes.
- Toss halved Brussels sprouts with 2 tablespoon of olive oil, remaining salt, and pepper. Roast for 20-30 minutes.
- Cook bow tie pasta in salted boiling water until al dente. Reserve 1/2 cup pasta water before draining.
- In a skillet, heat 1 tablespoon of olive oil and brown sliced smoked sausage. Set aside.
- In the same skillet, cook minced garlic until fragrant, then melt in butter and stir in cooked pasta, remaining salt, pepper, and smoked paprika.
- Combine roasted butternut squash, Brussels sprouts, and browned sausage with the pasta. Add 1/4 cup reserved pasta water to create a creamy texture.
- Serve immediately.
