Description

These apple pie egg rolls are golden, crispy egg roll wrappers bursting with warm homemade apple pie filling. Roll them in cinnamon sugar and serve with ice cream or caramel sauce.


Ingredients

  • 3 medium-sized green apples, peeled and diced
  • 1 tablespoon (15ml) lemon juice
  • 1 tablespoon (15ml) pure maple syrup
  • 2 tablespoons light brown sugar
  • 1 tablespoon (7.5g) all-purpose flour
  • 1 teaspoon (3g) ground cinnamon
  • 2 tablespoons (30ml) water
  • 11 egg roll wrappers
  • 3 tablespoons (36g) granulated sugar
  • 1 heaping teaspoon (5g) ground cinnamon

Instructions

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper. Set aside.
  2. In a large mixing bowl, toss the diced apples with lemon juice. Add the dry ingredients and mix until fully coated. Pour the maple syrup over the top and gently stir.
  3. Heat the apples on the stove over medium heat for 15-20 minutes until soft, stirring occasionally. Add water as needed to prevent sticking. Set aside to cool.
  4. Position one egg roll wrapper with a corner pointing up and one down. Wet the edges with water. Spoon two tablespoons of apple filling just below the center of the wrapper.
  5. Fold the bottom corner up and tuck it under the filling. Fold each side corner into the middle. Roll tightly towards the top corner, using water to seal the wrapper. Place on the prepared baking sheet.
  6. Lightly brush both sides of each roll with olive oil.
  7. Bake at 425°F for 10 minutes, then flip and bake for an additional 10 minutes until golden brown. Remove and roll in cinnamon sugar mixture.
  8. Prepare the cinnamon sugar mixture in a shallow bowl. Roll hot egg rolls in the mixture using tongs.
  9. For air fryer, preheat at 400°F for 3 minutes.
  10. Place egg rolls in a single layer in the air fryer. You may need to do 2 batches.
  11. Air fry for 5 minutes, flipping after 3 minutes.
  12. Dot a very light amount of oil on the egg rolls and roll in cinnamon sugar mixture.
  13. Allow to cool for 5-10 minutes on a wire rack before serving.

Notes

  • Serve with ice cream or caramel sauce for added flavor.
  • Adjust the sweetness by adding more or less brown sugar.
  • Store leftover egg rolls in an airtight container.
