Instructions
- Preheat your oven to 400 degrees Fahrenheit. Spray a muffin pan with non-stick cooking spray or line it with muffin liners to prevent sticking, then set it aside.
- In a small bowl, whisk together 2 cups of all-purpose flour, 2 teaspoons baking powder, and ½ teaspoon salt until well combined.
- In a large bowl, mix 1 cup whole milk, ¼ cup vegetable oil, 1 large egg, ½ cup granulated sugar, and 1 teaspoon vanilla extract until smooth.
- Add the dry flour mixture to the wet mixture and stir gently until just combined, being careful not to overmix.
- Fold in 1 ½ cups peeled and diced Granny Smith apples to evenly distribute them through the batter.
- Spoon the batter into the prepared muffin pan, filling each cup about two-thirds full.
- In a small bowl, mix ⅓ cup brown sugar, 1 teaspoon ground cinnamon, ⅔ cup all-purpose flour, and a dash of salt.
- Pour in ¼ cup melted unsalted butter and stir until the mixture forms moist clumps approximately the size of small peas.
- Sprinkle the crumb topping evenly over the muffins in the pan, covering each batter-filled cup.
- Bake the muffins in the preheated oven for 20 to 22 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the pan for at least 15 minutes before removing and serving to let the crumb topping set and the muffins firm up slightly.
