Description

These Apple Crisp Muffins are a delightful breakfast or snack option featuring tender muffins packed with tart Granny Smith apples and topped with a sweet, cinnamon-spiced crumb topping.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup whole milk
  • ¼ cup vegetable oil
  • 1 large egg
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 ½ cups Granny Smith apples, peeled and diced (about 2 apples)
  • ⅓ cup brown sugar
  • 1 teaspoon ground cinnamon
  • ⅔ cup all-purpose flour
  • 1 dash salt
  • ¼ cup unsalted butter, melted

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Spray a muffin pan with non-stick cooking spray or line it with muffin liners to prevent sticking, then set it aside.
  2. In a small bowl, whisk together 2 cups of all-purpose flour, 2 teaspoons baking powder, and ½ teaspoon salt until well combined.
  3. In a large bowl, mix 1 cup whole milk, ¼ cup vegetable oil, 1 large egg, ½ cup granulated sugar, and 1 teaspoon vanilla extract until smooth.
  4. Add the dry flour mixture to the wet mixture and stir gently until just combined, being careful not to overmix.
  5. Fold in 1 ½ cups peeled and diced Granny Smith apples to evenly distribute them through the batter.
  6. Spoon the batter into the prepared muffin pan, filling each cup about two-thirds full.
  7. In a small bowl, mix ⅓ cup brown sugar, 1 teaspoon ground cinnamon, ⅔ cup all-purpose flour, and a dash of salt.
  8. Pour in ¼ cup melted unsalted butter and stir until the mixture forms moist clumps approximately the size of small peas.
  9. Sprinkle the crumb topping evenly over the muffins in the pan, covering each batter-filled cup.
  10. Bake the muffins in the preheated oven for 20 to 22 minutes, or until a toothpick inserted into the center comes out clean.
  11. Allow the muffins to cool in the pan for at least 15 minutes before removing and serving to let the crumb topping set and the muffins firm up slightly.
