Easy Apple Cinnamon Muffins

- 1 3/4 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 1/2 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1/2 cup milk or buttermilk
- 1 teaspoon vanilla extract
- 1 1/2 cups chopped apples (peeled and cored)
- 1/2 cup all-purpose flour
- 1/4 cup brown sugar
- 1/2 teaspoon cinnamon
- 1/4 cup unsalted butter, cold and cubed
Instructions
- Mix the crumb topping: Combine flour, brown sugar, and cinnamon in a bowl. Cut in cold butter until crumbly. Refrigerate.
- Mix dry ingredients: In a large bowl, whisk flour, baking powder, salt, cinnamon, and nutmeg.
- Mix wet ingredients: In another bowl, whisk sugars, melted butter, eggs, milk, and vanilla.
- Combine wet and dry: Pour wet into dry and stir gently. Don’t overmix.
- Fold in chopped apples evenly into the batter.
- Fill muffin liners 3/4 full with batter.
- Top with chilled crumb mixture and press lightly.
- Bake at 375°F (190°C) for 18–22 minutes until golden and a toothpick comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack.
Notes
- Store muffins in an airtight container for up to 3 days.
- These muffins freeze well. Wrap individually and store in the freezer.
