- 2 pounds pork tenderloin
- 1 tablespoon light brown sugar, packed
- 1½ teaspoons salt
- 1 teaspoon smoked paprika
- ½ teaspoon garlic powder
- ½ teaspoon dried thyme
- ¾ cup apple butter
- 1 tablespoon apple cider vinegar
- 1 tablespoon whole grain mustard
Instructions
- In a small bowl, combine the brown sugar, salt, smoked paprika, garlic powder, and dried thyme. Rub this spice mixture thoroughly over all sides of the pork tenderloin. Place the seasoned tenderloin into your slow cooker.
- In a separate bowl, whisk together the apple butter, apple cider vinegar, and whole grain mustard until smooth. Pour this glaze evenly over the pork tenderloin within the slow cooker.
- Cover the slow cooker with its lid. Cook the pork on the LOW setting for 6 to 8 hours, or on the HIGH setting for 3 to 4 hours, until the meat is fork-tender. Once cooked, shred the pork using two forks directly in the slow cooker before serving.
- Serve the shredded apple butter glazed pork warm. It pairs exceptionally well with cheesy grits and crispy bacon.
