Amish Style Apple and Cinnamon Baked Oatmeal is a warm, comforting start to your day, with the enticing aroma of baked apples mingling with fragrant cinnamon.

- 3 cups old-fashioned rolled oats
- 1½ tsp baking powder
- 2 tsp ground cinnamon
- ¼ tsp ground nutmeg
- ¾ tsp salt
- ½ cup packed brown sugar
- 2½ cups milk
- 2 large eggs
- 1 tsp vanilla extract
- 4 tbsp melted butter or coconut oil
- 2–3 large apples (Honeycrisp or Gala), peeled and diced
Instructions
- Preheat oven to 375°F (190°C). Generously grease a 9×13-inch baking dish.
- Melt 4 tbsp butter (or coconut oil) and set aside to cool. In a large bowl, whisk 2 large eggs until frothy. Add 2½ cups milk, ½ cup packed brown sugar, the melted butter, and 1 tsp vanilla extract; whisk until well combined.
- In a separate medium bowl, combine 3 cups old-fashioned rolled oats, 1½ tsp baking powder, 2 tsp ground cinnamon, ¼ tsp ground nutmeg, and ¾ tsp salt. Stir until spices are evenly distributed.
- Pour the wet ingredient mixture into the dry oat mixture. Gently fold until oats are fully moistened. Fold in 2-3 large peeled, cored, and diced apples. Optionally, fold in ½ cup raisins and/or ½ cup chopped walnuts or pecans.
- Transfer the mixture to the prepared baking dish, spreading evenly. Bake for 35 to 45 minutes, or until edges are golden brown and the center is set.
- Remove from oven and let cool on a wire rack for 10-15 minutes to set. Slice and serve warm. Enjoy with maple syrup, yogurt, or cold milk. Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
