Amish Style Apple and Cinnamon Baked Oatmeal is a warm, comforting start to your day, with the enticing aroma of baked apples mingling with fragrant cinnamon.


Ingredients

  • 3 cups old-fashioned rolled oats
  • 1½ tsp baking powder
  • 2 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¾ tsp salt
  • ½ cup packed brown sugar
  • 2½ cups milk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 4 tbsp melted butter or coconut oil
  • 23 large apples (Honeycrisp or Gala), peeled and diced

Instructions

  1. Preheat oven to 375°F (190°C). Generously grease a 9×13-inch baking dish.
  2. Melt 4 tbsp butter (or coconut oil) and set aside to cool. In a large bowl, whisk 2 large eggs until frothy. Add 2½ cups milk, ½ cup packed brown sugar, the melted butter, and 1 tsp vanilla extract; whisk until well combined.
  3. In a separate medium bowl, combine 3 cups old-fashioned rolled oats, 1½ tsp baking powder, 2 tsp ground cinnamon, ¼ tsp ground nutmeg, and ¾ tsp salt. Stir until spices are evenly distributed.
  4. Pour the wet ingredient mixture into the dry oat mixture. Gently fold until oats are fully moistened. Fold in 2-3 large peeled, cored, and diced apples. Optionally, fold in ½ cup raisins and/or ½ cup chopped walnuts or pecans.
  5. Transfer the mixture to the prepared baking dish, spreading evenly. Bake for 35 to 45 minutes, or until edges are golden brown and the center is set.
  6. Remove from oven and let cool on a wire rack for 10-15 minutes to set. Slice and serve warm. Enjoy with maple syrup, yogurt, or cold milk. Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
