Description
Crispy and flavorful southwestern egg rolls made in the air fryer with a smoky chicken, black bean, corn, and cheese filling. Perfect for quick dinners, snacks, or game day.

- 8 flour tortillas (8-inch, thin and soft)
- 2 cups cooked shredded chicken (rotisserie recommended)
- 1 cup black beans (drained and rinsed)
- 1 cup frozen corn (thawed)
- 1 cup shredded cheese (sharp cheddar or Mexican blend)
- 3 green onions (chopped)
- 1/4 cup fresh cilantro (chopped, optional)
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp smoked paprika
- 1/4 tsp garlic powder
- Pinch of salt
- Olive oil spray
- 1 egg beaten with 1 tbsp water (egg wash)
Instructions
- In a large bowl, combine shredded chicken, black beans, corn, cheese, green onions, cilantro (if using), and spices. Mix well.
- Beat the egg with water in a small bowl to make egg wash. Lay out a tortilla on a clean surface with filling nearby and a plate or baking sheet ready.
- Spoon about 1/4 to 1/3 cup of filling onto the center of the tortilla, leaving about 1 inch clear around edges. Fold in sides and roll tightly from one end to the other. Brush egg wash on the edge to seal. Repeat for all tortillas.
- Lightly spray each egg roll with olive oil spray. Place seam side down in a single layer in the air fryer basket. Air fry at 380°F (193°C) for 10-12 minutes, flipping halfway through, until golden brown and crispy.
- Let egg rolls cool for 2-3 minutes before serving. Serve with your favorite dipping sauce such as ranch, salsa, or chipotle mayo.
