- 1 ½ lbs chicken thighs (boneless and skinless, cut into chunks)
- 2 tablespoons vegetable oil
- 1 large onion (chopped)
- 3 cloves garlic (minced)
- 1 inch piece of ginger (grated)
- 1 medium red bell pepper (diced)
- 1 can diced tomatoes (14 oz)
- 1 cup chicken broth
- 1 cup creamy peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 cup sweet potatoes (peeled and diced)
- 1 cup green beans (trimmed and cut into 2-inch pieces)
- Salt and black pepper to taste
- Fresh cilantro or parsley for garnish
- Lime wedges for serving
Instructions
- Heat the vegetable oil in a large pot over medium heat and sauté the chopped onions until translucent.
- Add minced garlic and grated ginger, cooking for an additional minute until fragrant.
- Season chicken chunks with salt and pepper, then brown on all sides in the pot.
- Incorporate diced red bell pepper and cook for another 3 minutes.
- Pour in diced tomatoes and chicken broth, stirring well to combine.
- Add peanut butter, soy sauce, chili powder, cumin, and coriander, mixing until fully incorporated.
- Add diced sweet potatoes and bring to a simmer, covering the pot for about 15 minutes.
- Stir in green beans and simmer for another 5-7 minutes until tender yet crisp.
- Taste and adjust seasoning as needed.
- Serve hot, garnished with cilantro or parsley and lime wedges.
