  • 2 tablespoons vegetable oil
  • 1 large onion (chopped)
  • 3 cloves garlic (minced)
  • 1 inch piece of ginger (grated)
  • 1 medium red bell pepper (diced)
  • 1 can diced tomatoes (14 oz)
  • 1 cup chicken broth
  • 1 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 cup sweet potatoes (peeled and diced)
  • 1 cup green beans (trimmed and cut into 2-inch pieces)
  • Salt and black pepper to taste
  • Fresh cilantro or parsley for garnish
  • Lime wedges for serving

Instructions

  1. Heat the vegetable oil in a large pot over medium heat and sauté the chopped onions until translucent.
  2. Add minced garlic and grated ginger, cooking for an additional minute until fragrant.
  3. Season chicken chunks with salt and pepper, then brown on all sides in the pot.
  4. Incorporate diced red bell pepper and cook for another 3 minutes.
  5. Pour in diced tomatoes and chicken broth, stirring well to combine.
  6. Add peanut butter, soy sauce, chili powder, cumin, and coriander, mixing until fully incorporated.
  7. Add diced sweet potatoes and bring to a simmer, covering the pot for about 15 minutes.
  8. Stir in green beans and simmer for another 5-7 minutes until tender yet crisp.
  9. Taste and adjust seasoning as needed.
  10. Serve hot, garnished with cilantro or parsley and lime wedges.
